Here are a couple of recipes that you can make and use for gift-giving. The taco seasoning mix can be multiplied so you can make any quantity you need. Fill small jars with the mixes and include the directions. These are fun to do with kids.
Taco Seasoning Mix
1/2 tsp crushed dried red pepper
1/2 tsp instant minced garlic
1/4 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp corn starch
2 tsp instant minced onion
1 tsp chile powder
1 tsp salt
Combine all ingredients in a small bowl and mix. Place the mix in a small glass jar or make a packet with a six-inch square of aluminum foil. The seasoning will keep for six months. This will make two tablespoons of taco seasoning and is enough to season one pound of ground beef or turkey for tacos.
To prepare the taco filling
1 pound ground beef or turkey
1/2 cup water
2 tbs taco seasoning
Brown the ground beef/turkey in a skillet and drain off the grease. Add water and taco seasoning mix and simmer for ten minutes stirring occasionlly. Makes enough for 8 to ten tacos.
Mexican hot chocolate is popular as a breakfast drink. There are many recipes. Most Mexican hot chocolate recipes require beating either with a carved wooden hand beater, called a molinillo. You can use an electric hand mixer also.
Mexican Hot Chocolate mix
1 1/2 oz unsweetened chocolate
1/4 cup sugar
5 tsp instant coffee
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
dash of salt
You can layer the dry ingredients in a jar. Or, the ingredents may be mixed and put in a small jar. This mix makes four servings. Use within six months.
To prepare the hot chocolate
2 cups milk
1/4 cup water
Combine all ingredients except milk in saucepan and heat on low stirring constantly until the chocolate is melted and the mixture is smooth. Bring to a boil and then reduce heat. Simmer uncovered for four minutes, stirring constantly. Stir in the mild and heat until hot. Remove from stove and beat with a hand mixer until it is foamy. Serve immediately. Top with whipped cream (optional).
