Natillas is a soft, boiled milk custard that is a popular Mexican dessert.

Natillas

Ingredients

4 cups milk
1/8 tsp salt
1/4 cup flour
1 tsp vanilla
4 eggs, separated
3/4 cup sugar

Directions

Beat the egg yolks and stir in the sugar, flour and salt. Mix until smooth. Put the milk and yolk mixture in a saucepan and cook over medium heat until the
mixture thickens to a soft custard consistency. Remove from heat and cool until the mixture reaches room temperature. Beat the egg whites until stiff and fold
into the custard. Spoon into individual custard cups and chill. Before serving sprinkle with ground nutmeg or cinnamon. Makes eight servings.
