It is nearly impossible to do studies on what causes cancer. There are so many different facets of experiments that must be considered. For example let's say you are trying to prove that some food product, we'll call it Food Product 1, causes cancer. It could be that Food Product 1 alone does not cause cancer, but in combination with Food Product 2 or 3, it can be a potential carcinogen. The issue is isolating all the factors, creating a control group and coming up with any reliable results.

Recent research results from a company in Sweden seem to point to acrylamide as a cancer causing agent.

What is Acrylamide?

Acrylamide is formed when a food product is fried, roasted or grilled to turn a tasty golden brown. Basically it is formed when foods are over-cooked. It can also be created during microwaving.

The intake of acrylamide in the diet has not been linked to common cancers such as breast, colorectal, baldder or renal cancer. It is being linked to uterine cancer and other cancers related to the womb. It apears the ingestion of acrylamide may disrupt proteins which maintain a hormone balance in the body.

Acrylamide is also found in some potato chips, coffee, biscuits and bread.

At the rate we are going, there will not be many foods left that we can eat without risking cancer. Although the test results are not definitive, they seem to indicate that we are causing our own cancer by the way we cook our foods.

Boiled foods do not create any acrylamide! Boiled steak anyone?
